Instructions

  1. Finely dice 1/2 peeled red onion.

  2. Halve or quarter 2 cups cherry tomatoes.

  3. Dice 1 large cucumber, peeling and seeding if not English or Persian.

  4. Julienne 1 peeled large carrot.

  5. Thinly slice 4 radishes, if desired.

  6. Dice 1 jalapeño, removing seeds and veins for less heat, if desired.

  7. Combine all prepared vegetables in a large bowl.

  8. Toss with 1/4 cup chopped cilantro, 2 tablespoons lemon juice, 1/8 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon ground cumin, if desired.
