Instructions

  1. Layer dehydrated potatoes, onions, green onions, tomatoes, summer squash, carrots, zucchini, cabbage, and vegetable stock into a 1-quart canning jar, compressing to fit; alternatively, combine all ingredients in a resealable bag.

  2. Label the packaged mix with the date and contents, then store it in a cool, dry place away from direct sunlight.

  3. To prepare the soup, start boiling 16 cups (4 quarts) of water in a large pot; add the mix, bring to a boil, then simmer on low for about 3 hours until vegetables are tender and the soup thickens, or cook in a slow cooker on low for 6 hours.
