Preheat the oven to 425 F.

Peel jicama and cut into fry-shaped pieces.

Spread jicama on a baking sheet in a single layer, then drizzle with olive oil and toss. Use additional sheets if needed to avoid crowding.

In a bowl, mix chili powder, garlic powder, onion powder, kosher salt, and ground cumin. Sprinkle over jicama and toss to coat.

Roast for 15 minutes, then flip and continue roasting for 10-15 minutes until crispy and lightly browned.

Before serving, squeeze with fresh lime juice, sprinkle with cilantro, and season with additional salt and pepper.
