Japanese Kale Kobachi (Side Dish)

Instructions

  1. Wash kale, discard the bottom stems, and chop into bite-sized strips.

  2. Heat olive oil in a small pan over medium-high heat, add chopped kale, and sauté for 2 minutes until slightly wilted.

  3. Drizzle mirin over the kale and continue to sauté for 1 minute to cook off the alcohol.

  4. Stir in soy sauce and a pinch of salt, then sauté for another 2 minutes until tender yet firm, or cook longer for a softer texture.

  5. Serve the kale immediately.
