Japanese Enoki and Shiitake Mushroom Soup Recipe
A hearty mushroom soup features enoki and shiitake mushrooms, glass noodles, and green onions, all seasoned with soy sauce and sake.

Heat canola oil in a large pot over medium-high heat.

Prepare shiitake by removing stems and thinly slicing caps; trim enoki and cut into 2-inch pieces.

Sauté both mushrooms in the pot until tender.

Soak dried noodles in warm water for 5 minutes, then drain and cut into 3-inch pieces.

Add chicken broth to the pot, bring to a simmer, and skim any foam.

Stir in the prepared noodles and green onion, simmering until heated through.
