Japanese Cold Noodles (Hiyashi Chuka)

Instructions

  1. Start boiling water in a large pot.

  2. Heat a skillet with oil over medium heat. Combine sugar with beaten egg. Pour one-quarter of the egg mixture into the skillet, spread thinly, and fry until done. Repeat to make four thin omelets, then slice them into strips.

  3. Cook chukamen noodles in the boiling water according to package directions, then drain and cool thoroughly in cold water.

  4. Combine all dressing ingredients and mix well.

  5. Arrange the chilled noodles on individual plates, topping them with cucumber, ham, and egg strips.

  6. Garnish with beni shoga, nori, and sesame seeds. Pour the dressing over the noodles just before serving.
