Japanese Clam Soup (Asari No Sumashijiru)

Instructions

  1. Start boiling water in a medium pot. Add 1/2 to 1 teaspoon salt and reduce heat to medium.

  2. Add clams to the simmering water and cook until they open; discard any that remain closed.

  3. While the clams cook, zest a lemon.

  4. Place 4-5 clams in each soup bowl, cover with broth, garnish with lemon zest and parsley, and serve immediately.
