Japanese Broiled Unagi Eel With Rice

Instructions

  1. Preheat the broiler.

  2. Cook rice with salt in a rice cooker or simmer 1.5 cups water with rice, covered, for 15 minutes until absorbed.

  3. In a large bowl, combine half the chives, scallions, rice wine vinegar, sesame oil, and fish sauce.

  4. Skin the eel if necessary, then broil until it begins to color, flipping to cook both sides.

  5. Mix the cooked rice into the large bowl with the seasonings.

  6. Serve in individual bowls, topped with remaining chives and eel pieces.
