Instructions

Prepare beans by soaking overnight or quick-soaking per package instructions, then simmer until tender and drain.

Heat olive oil in a skillet and cook onions until softened.

Incorporate minced garlic, green onions, herbs, spices, and lemon zest; cook for 2 minutes.

Stir in vinegar, then add the prepared beans and stock to the pot.

Bring the soup to a boil, then reduce heat to low, cover, and simmer for 1.5 hours.

Check bean tenderness and soup thickness, adding more liquid if desired, and continue simmering for another 30 minutes if needed.
