Jamaican Jerk Flank Steak

Instructions

  1. Combine marinade ingredients in a blender or food processor, then pour over flank steak in a sealed bag and refrigerate for 2 to 8 hours.

  2. Preheat grill to medium heat.

  3. Remove flank steak from the bag, reserving the marinade, and let it sit at room temperature for 15 minutes.

  4. Grill the steak for 13 to 15 minutes total, flipping halfway through, until medium-rare.

  5. While the steak grills, bring the reserved marinade to a boil in a saucepan over medium heat for 5 minutes, then reduce heat and simmer for 2 to 3 minutes to thicken.

  6. Remove steak from heat and let it rest for 5 minutes before slicing against the grain and topping with the reduced sauce.
