Jamaican Jerk Chicken

Instructions

  1. Process all marinade ingredients (except chicken) into a smooth puree.

  2. Coat chicken pieces thoroughly with the marinade in a large bowl, then cover and refrigerate for 6 hours to overnight.

  3. Preheat a gas or charcoal grill to medium heat (350 F to 375 F) for direct and indirect grilling.

  4. Remove chicken from marinade and grill skin-side down on the direct side for 15 minutes until charred, managing any flare-ups.

  5. Flip chicken, move to the indirect side, cover, and cook for an additional 10 to 20 minutes until the internal temperature reaches 165 F.
