Jamaican Jerk Beer Can Turkey

Instructions

  1. Prepare grill for indirect cooking.

  2. Blend all jerk seasoning ingredients in a food processor until smooth.

  3. Rub the jerk mixture liberally over the turkey, including under the skin.

  4. Remove about one-quarter of the beer from the can.

  5. Place the beer can on the unheated section of the grill, ensuring it is stable.

  6. Position the turkey cavity over the beer can.

  7. Grill the turkey over medium to medium-high heat for 2.5 to 3 hours, or until the thigh reaches an internal temperature of 165 F (74 C).

  8. Remove turkey from grill and let it rest for 10 minutes before carving and serving.
