Jamaican Beef Patties

Preheat the oven to 350°F (175°C) with racks positioned in the upper and lower thirds.

Combine flour, turmeric, salt, and vegetable shortening in a large bowl, rubbing until the mixture has a sandy texture. Gradually add ice water, mixing until a smooth dough forms; divide into two large pieces or 10-12 smaller balls, wrap, and refrigerate for 30-40 minutes.

Mix ground beef with pepper and allspice. In a large skillet, heat vegetable oil over medium heat. Sauté onions until translucent, then add chili (if using), thyme, and garlic, cooking for another minute, and season with salt.

Add the seasoned ground beef to the skillet, breaking up clumps, and cook until no longer pink. Stir in ketchup and water or broth; bring to a boil, then reduce heat and simmer until the liquid reduces to a thick sauce. Fold in green onions and allow to cool completely.

On a floured surface, roll out one dough piece into a large circle and cut out 5-inch circles; if using smaller dough balls, roll each into a 5-inch circle.

Place approximately 3 heaping tablespoons of the cooled filling onto one half of each dough circle. Moisten the edges with water, fold the dough over, and press to seal. Crimp the edges with a fork and trim any excess dough.

Arrange the assembled patties on two parchment-lined baking sheets.

Whisk an egg with 1 tablespoon of water to create an egg wash, then brush it over the patties.

Bake for 30-40 minutes until golden brown, rotating the baking sheets halfway through cooking, then cool on wire racks.
