Jalapeño Popper Chicken

Instructions

  1. Preheat the oven to 375 F and line a baking sheet with nonstick foil.

  2. Combine cream cheese, Mexican cheese, chopped bacon, and minced jalapeño in a large bowl to create the filling.

  3. Cut a horizontal pocket into each chicken breast, then stuff each with 1/4 cup of the filling, securing with a toothpick if necessary.

  4. Prepare three shallow bowls: one with flour, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs mixed with taco seasoning.

  5. Dredge each stuffed chicken breast in the flour, then dip in egg, and finally coat with the seasoned breadcrumbs, pressing to adhere.

  6. Place the coated chicken breasts on the prepared baking sheet.

  7. Bake for approximately 30 minutes, or until the chicken is thoroughly cooked.
