Instructions

  1. Finely chop the meat by hand; do not use a food processor or grinder to preserve texture.

  2. In a bowl, combine the chopped meat with lemon juice and garlic cloves.

  3. Season generously with olive oil, salt, pepper, and anchovy if using.

  4. Marinate the mixture for 10 minutes to 2 hours; note that longer marination reduces pinkness.

  5. Before serving, remove garlic, arrange the meat in mounds on dishes, and garnish with shaved hard cheese and white truffle, if using.
