Italian-Style Lamb Shanks

Italian-inspired lamb shanks, slow-braised with garlic, tomatoes, and onions, are ideal served over pasta, rice, or mashed potatoes.

Instructions

  1. Season lamb shanks with olive oil, salt, and pepper.

  2. Heat a heavy Dutch oven with olive oil; sear the seasoned lamb shanks until browned and remove.

  3. Add a teaspoon of olive oil and sliced onions to the pot, toss to coat, reduce heat, and cover.

  4. Sweat onions until limp, stirring frequently.

  5. Stir in wine and cook for two minutes, scraping up browned bits from the pot bottom.

  6. Add garlic, tomatoes, and water; stir to combine.

  7. Return lamb shanks to the pot.

  8. Reduce heat to low and simmer for 1 1/2 hours, or until tender, turning shanks occasionally and adding water if the sauce thickens.

  9. Serve braised lamb shanks over pasta, rice, or mashed potatoes, garnished with parsley.
