Instructions

  1. Preheat oven to 425 F and line a baking sheet with foil.

  2. Scrub, prick, and rub sweet potatoes with olive oil; bake for 35-45 minutes until tender.

  3. While potatoes bake, brown crumbled sausage in a skillet.

  4. Add red pepper, onion, garlic, Italian seasoning, and salt to the skillet; cook until vegetables soften.

  5. Halve the baked sweet potatoes, scoop out the flesh into a bowl, leaving the skins intact.

  6. Combine the scooped sweet potato with the sausage and vegetable mixture.

  7. Fill the potato skins with the mixture and top with cheese.

  8. Bake for 5 minutes until the cheese is browned and skins are crisp.

  9. Garnish with parsley and serve hot.
