Instructions

  1. Preheat the oven to 350 F.

  2. Finely chop bread into crumbs using a food processor; set aside.

  3. Heat butter in a skillet over medium heat; cook onion, carrot, celery, mushrooms, and Italian seasoning until soft and liquid evaporates, about 10 minutes, then cool slightly.

  4. Combine cooled vegetables, bacon, beef, and pork in a food processor, pulsing until finely chopped.

  5. In a large bowl, mix the meat-vegetable blend with breadcrumbs, cream, soy sauce, Worcestershire, eggs, salt, and pepper until well combined.

  6. Form the mixture into a 9x5 inch loaf on a buttered, parchment-lined baking sheet.

  7. Bake for 40-45 minutes, or until an internal temperature of 135 F is reached.

  8. Increase oven temperature to 500 F.

  9. In a small bowl, combine all glaze ingredients.

  10. Brush the meatloaf with the glaze and bake for an additional 12 minutes, until well browned.

  11. Let the meatloaf rest for 10 minutes before serving.
