Iron Skillet Roast Chicken
A simple cast-iron skillet roasted chicken recipe can be prepared quickly and cooked in under an hour.

Preheat oven to 450 F and place a 10-inch cast-iron skillet inside to heat.

Season the chicken cavity with salt and pepper.

Mix 1/2 teaspoon salt, 1/4 teaspoon black pepper, onion powder, thyme, paprika, garlic powder, and olive oil; rub this mixture over the chicken.

Carefully transfer the chicken into the hot skillet, then return the skillet to the oven and reduce the temperature to 400 F.

Roast for 50 to 60 minutes, or until the thickest part of a thigh reaches 165 F.

Allow the chicken to rest for 10 minutes before carving.
