Irish Potato Salad

Instructions

  1. Start boiling salted water in a large pot.

  2. Peel, wash, and slice the potatoes, then add them to the boiling water and cook for 20 to 22 minutes until tender.

  3. Drain the cooked potatoes, place them into an ice bath for 10 to 15 minutes, then drain again and cut into smaller cubes.

  4. In a large bowl, combine mayonnaise, dill pickle, sour cream, garlic, green onion, crumbled bacon, salt, and black pepper.

  5. Add the cubed potatoes to the dressing and toss to coat.

  6. Transfer to a serving dish, cover, and refrigerate for 2 hours before serving.
