Instructions

  1. Add chicken, onions, beans, corn, green chilies, jalapeño, garlic, cumin, oregano, and half the salt to the Instant Pot; stir and pour in chicken stock.

  2. Secure the lid, set the steam release to sealing, and pressure cook on high for 15 minutes.

  3. Allow natural pressure release for 10 minutes, then carefully vent any remaining pressure.

  4. Remove chicken, shred or chop, then return it to the pot.

  5. Stir in sour cream and half the cheese; season with additional salt and pepper as needed.

  6. Serve chili garnished with remaining cheese, cilantro, and desired toppings.
