Instant Pot Tuscan Chicken

Instructions

  1. Season chicken with Italian seasoning, salt, and pepper. In an electric pressure cooker, heat oil and 1 tablespoon butter on sauté, then cook chicken until golden (about 6 minutes total) and set aside.

  2. Add the remaining 2 tablespoons butter, mushrooms, and onions to the pot, sautéing for about 3 minutes until softened. Stir in garlic, chicken broth, and half of the sun-dried tomatoes, scraping up any browned bits, and sauté for 2-3 minutes.

  3. Return the chicken to the pot, secure the lid, and pressure cook on high for 6 minutes; perform a quick release of pressure, then remove the chicken.

  4. In a small bowl, whisk 2 tablespoons cold water with flour, then whisk this slurry into the pot liquid. Stir in heavy cream, the remaining sun-dried tomatoes, spinach, and Parmesan; heat on sauté until the spinach wilts.

  5. Return the cooked chicken to the pot, coat with sauce, and serve immediately.
