Instant Pot Spanish Rice

Instructions

  1. Rinse and drain the rice thoroughly.

  2. Turn the electric pressure cooker to sauté; add oil, garlic, and jalapeno, then cook for 1 minute until fragrant.

  3. Deactivate sauté mode, then add broth, chili powder, smoked paprika, cumin, and salt.

  4. Stir in the rinsed rice.

  5. Layer salsa on top without stirring, then close and lock the lid.

  6. Pressure cook on high for 5 minutes; allow 10 minutes for natural pressure release, then manually release remaining pressure.

  7. Fluff the rice with a fork, then garnish with cilantro and serve.
