Instructions

  1. Sort and rinse pinto beans, discarding damaged ones.

  2. Add beans to a pressure cooker with water, onion, garlic, salt, cumin, oregano, pepper, bacon drippings (or lard or oil), and cayenne if desired.

  3. Secure lid, set to sealing, and cook on high pressure for 45 minutes (bean/chili button or manual setting).

  4. Allow 20 minutes natural pressure release, then quick release remaining pressure.

  5. Test beans for tenderness; if needed, cook for an additional 10 minutes.

  6. Drain beans, reserving liquid.

  7. Puree beans in the pot with an immersion blender, adding reserved liquid for desired consistency.

  8. Season with additional salt to taste.

  9. Serve.
