Instructions
-
Start cooking rice: In the Instant Pot, combine rice, water, and Kosher salt, then pressure cook on high for 10 minutes, followed by a 10-minute natural release.
-
Carefully remove the lid, fluff the rice with a fork, and set it aside; clean the pot insert.
-
Using the sauté setting, brown sliced andouille sausage in oil for 5 minutes, then remove and set aside.
-
Add butter, onion, celery, green bell pepper, Creole seasoning, and garlic to the pot, sautéing until the onions are soft.
-
Return the sausage to the pot, then add dried beans, water, dried basil, salt, black pepper, dried sage, and bay leaves; stir well.
-
Turn off sauté, secure the lid, and pressure cook on high for 40 minutes, followed by a 20-minute natural release before venting.
-
Remove the lid, mash about half of the beans for a creamy consistency, and adjust seasoning to taste.
-
Serve the beans over the hot cooked rice.
