Instant Pot Red Beans and Rice

Instructions

  1. Start cooking rice: In the Instant Pot, combine rice, water, and Kosher salt, then pressure cook on high for 10 minutes, followed by a 10-minute natural release.

  2. Carefully remove the lid, fluff the rice with a fork, and set it aside; clean the pot insert.

  3. Using the sauté setting, brown sliced andouille sausage in oil for 5 minutes, then remove and set aside.

  4. Add butter, onion, celery, green bell pepper, Creole seasoning, and garlic to the pot, sautéing until the onions are soft.

  5. Return the sausage to the pot, then add dried beans, water, dried basil, salt, black pepper, dried sage, and bay leaves; stir well.

  6. Turn off sauté, secure the lid, and pressure cook on high for 40 minutes, followed by a 20-minute natural release before venting.

  7. Remove the lid, mash about half of the beans for a creamy consistency, and adjust seasoning to taste.

  8. Serve the beans over the hot cooked rice.
