Instant Pot Pulled Pork

Instructions

  1. Dry pork with paper towels. In a large bowl, combine brown sugar, smoked paprika, kosher salt, garlic powder, chili powder, black pepper, onion powder, cumin, dry mustard, and cayenne. Toss pork chunks with the spice mixture.

  2. Place a trivet in the Instant Pot, then add water and vinegar. Arrange the seasoned pork on the trivet.

  3. Secure the lid, set the steam release valve to seal, and pressure cook on high for 45 minutes.

  4. Allow a natural pressure release for 15 to 20 minutes, then vent any remaining pressure.

  5. Remove and shred the pork. Drain and discard the cooking liquids.

  6. Stir 1 1/2 cups barbecue sauce into the shredded pork.

  7. Return the pork to the Instant Pot and sauté on the lowest setting until thoroughly heated. Serve.
