Instructions

  1. Place chicken breasts, garlic, bay leaf, broth, and salt into the Instant Pot. Seal the lid and vent.

  2. Pressure cook on high for 5 minutes, then naturally release for 5 minutes before quick releasing any remaining pressure.

  3. Optionally, prepare barbecue sauce: combine ketchup, vinegar, brown sugar, smoked paprika, garlic powder, salt, and pepper in a saucepan; simmer for 5 minutes, stirring.

  4. Remove the bay leaf, mash garlic into the cooking liquid, and shred the chicken with two forks, mixing it with the liquid.

  5. Season the pulled chicken with salt, or combine with the barbecue sauce.
