Instant Pot Prime Rib Roast

Instructions

  1. Allow the roast to reach room temperature for 1 to 2 hours, then season all sides with kosher salt and coarsely ground black pepper.

  2. Place a trivet in the Instant Pot, add beef stock, red wine (or additional broth), and optional fresh herbs, then position the seasoned roast on the trivet.

  3. Secure the lid, ensure the vent is set to "sealing," and pressure cook on high for 5 minutes.

  4. After cooking, allow a natural pressure release for 35 minutes; the pot will automatically switch to "keep warm."

  5. Open the pot and verify the internal temperature of the roast is approximately 115 F; if lower, re-lid and continue warming for 5 to 10 minutes to reach the target temperature.

  6. Remove the roast to a plate and strain the pot liquids into a separate cup.

  7. Remove the trivet, then set the Instant Pot to its highest sauté setting, add vegetable oil, and sear the roast on all sides for about 10 minutes until browned, or use a heavy skillet.

  8. Transfer the seared roast to a platter, tent with foil, and let it rest for 25 minutes.

  9. With the pot still on sauté, add flour to the drippings and cook for 2 minutes, then gradually whisk in the strained liquids, cooking until the gravy is smooth and thickened; adjust seasonings.

  10. Serve the finished gravy alongside the carved roast.
