Instant Pot Pork Tenderloin Recipe

Instructions

  1. Dry and cut the pork tenderloin into two pieces. Season with salt and rub all over with a mixture of chili powder, paprika, garlic powder, oregano, cumin, and pepper.

  2. Set the Instant Pot to sauté, then add olive oil and butter. Brown the pork pieces for about 6 minutes, turning to sear all sides, then remove the pork.

  3. Add chicken stock to the pot and scrape up any browned bits. Place a trivet and return the browned pork to the pot.

  4. Secure the lid, set the valve to seal, and pressure cook on high for 0 minutes. Allow 15 minutes of natural pressure release.

  5. Verify pork reaches 145°F internal temperature. Remove the pork and let it rest for 5 minutes.

  6. To make a sauce, set the Instant Pot to sauté and simmer the remaining juices. Whisk in a slurry of 1 tablespoon cornstarch with an equal amount of cold water, stirring until thickened.

  7. Slice the pork tenderloin and serve, drizzling with the pan juices.
