Instant Pot Pork Chops and Potatoes

An Instant Pot meal of seasoned pork chops and tender potatoes can be prepared in under an hour.

Instructions

  1. Set Instant Pot to sauté and add olive oil.

  2. Season pork chops with paprika, half the pepper, 1/2 tsp garlic powder, and 1/2 tsp salt. Sear chops for 3 minutes per side, then remove.

  3. Sauté onion for 2 minutes in the pot, then add chicken broth and deglaze.

  4. Return seared pork chops to the pot.

  5. Place a steaming basket over chops, add potatoes. Toss potatoes with remaining pepper, garlic powder, rosemary, thyme, chives, and 1/2 tsp salt.

  6. Seal lid, set to high pressure for 5 minutes. Allow 10 minutes natural release, then quick release remaining pressure.

  7. Transfer cooked potatoes and chops to a warm platter.

  8. To make gravy, select sauté. Whisk 2 tbsp cornstarch with 2 tbsp cold water, then gradually add to simmering pot liquid, stirring until thickened.

  9. Spoon gravy over chops and garnish with chives or parsley.
