Instant Pot Minestrone Recipe

Instructions

  1. Heat olive oil in an Instant Pot on sauté mode, then add carrots, celery, onion, and garlic, sautéing for about 5 minutes until fragrant.

  2. Stir in green cabbage, pesto, crushed tomatoes, vegetable broth, pasta, bay leaves, salt, and pepper.

  3. Seal the Instant Pot and cook on the soup setting for 3 minutes.

  4. Quick-release steam, then add cannellini beans, parsley, and spinach.

  5. Sauté until heated through, then season to taste.

  6. Remove bay leaves and serve.
