Instant Pot Mashed Potatoes

Instructions

  1. Prepare potatoes by rinsing, scrubbing, optionally peeling, and cutting them into 1-2 inch cubes. Mince garlic if adding.

  2. Place the cubed potatoes, minced garlic (if using), salt, and water or stock into the Instant Pot.

  3. Secure the lid, set the vent to "seal", and cook on high pressure for 8 minutes, followed by a quick release.

  4. While the potatoes cook, warm the half-and-half or milk with butter in a microwave or saucepan until the butter melts.

  5. Drain the cooked potatoes and garlic, reserving the cooking liquid. Transfer them to a large bowl and mash.

  6. Add the warm cream and butter mixture to the potatoes, continuing to mash until smooth; use reserved cooking liquid to reach desired consistency.

  7. Season with salt and pepper to taste, and stir in chives or parsley if desired.
