Instructions

  1. Rinse 1 pound dried baby lima beans, removing any small stones or malformed beans.

  2. Combine the rinsed lima beans, 3 cups low-sodium vegetable broth, 4 cups water, 1 small chopped onion, 2 minced garlic cloves, 2 large bay leaves, and 2 teaspoons salt in the Instant Pot inner pot, adjusting salt if using non-low-sodium broth.

  3. Place the lid, ensure the vent is sealed, and pressure cook on high for 25 minutes.

  4. Allow a 5-minute natural pressure release, then quick release the remaining pressure.

  5. Once the float valve drops, remove the lid. If beans are firm, re-cover and cook for an additional 2 to 5 minutes on high pressure, then quick release.

  6. Remove the bay leaves before serving or storing the lima beans.
