Instant Pot Korean Beef

Instructions

  1. Cut beef into 3/4 to 1-inch cubes.

  2. Mince garlic.

  3. Slice green onions diagonally, separating the white/light green parts from the dark green parts.

  4. In the Instant Pot, combine minced garlic, white/light green green onions, beef stock, soy sauce, brown sugar, rice wine vinegar, gochujang, ginger, and black pepper; stir well. Add beef cubes and stir to coat.

  5. Seal the Instant Pot and pressure cook on high for 25 minutes, then quick release pressure.

  6. Whisk water and cornstarch to create a slurry. Cancel the pressure cook setting and switch to sauté.

  7. Stir the cornstarch slurry into the pot and cook for 1-2 minutes until the sauce thickens.

  8. Garnish the Korean beef with sesame seeds and dark green green onions before serving.
