Instant Pot Gumbo Recipe

Instructions

  1. To prepare the rice, combine rice, water, and kosher salt in the Instant Pot. Pressure cook on high for 10 minutes, then allow a 10-minute natural pressure release before fluffing. Set aside and cover.

  2. Clean the Instant Pot insert.

  3. For the gumbo, create a roux by stirring flour and oil in the Instant Pot on sauté medium heat for 5-7 minutes until peanut butter-colored.

  4. Stir in onion, green bell pepper, celery, and garlic; sauté for 8 minutes until softened.

  5. Add chicken broth, diced tomatoes, chicken, sausage, okra, Creole seasoning, oregano, thyme, basil, salt, pepper, and bay leaf.

  6. Secure the lid and pressure cook on high for 8 minutes.

  7. Allow a 15-minute natural pressure release, then manually release any remaining pressure and carefully open the lid.

  8. Discard the bay leaf.

  9. Serve gumbo in bowls, stir in filé powder, then top with cooked rice and garnish with parsley and green onion. Offer hot sauce if desired.
