Instructions

  1. Prepare onions by slicing them 1/4-inch thick; shred Gruyère and set aside.

  2. Set Instant Pot to sauté (lowest setting). Melt butter, then add onions and baking soda, sautéing for 3-4 minutes until softened. Stir in garlic for 1 minute, then cancel sauté.

  3. Add 1/4 cup beef stock (or sherry/wine mixture) to the onions. Secure the lid and set the Instant Pot to high pressure for 18 minutes; quick release steam upon completion.

  4. Select sauté and cook, stirring constantly, until liquid evaporates and onions are deep golden brown.

  5. Stir in salt, pepper, the remaining beef stock, Worcestershire sauce, bay leaf, and thyme. Bring the soup to a boil on the highest sauté setting, then reduce to the lowest setting and simmer for 10 minutes.

  6. Discard the bay leaf and thyme; adjust seasonings to taste.

  7. Preheat the broiler. Ladle soup into oven-safe bowls on a baking sheet. Top each with toasted bread and a generous layer of shredded Gruyère. Broil 4-6 inches from the element until the cheese melts and browns.

  8. Garnish with thyme or chives before serving.
