Instructions
-
Prepare onions by slicing them 1/4-inch thick; shred Gruyère and set aside.
-
Set Instant Pot to sauté (lowest setting). Melt butter, then add onions and baking soda, sautéing for 3-4 minutes until softened. Stir in garlic for 1 minute, then cancel sauté.
-
Add 1/4 cup beef stock (or sherry/wine mixture) to the onions. Secure the lid and set the Instant Pot to high pressure for 18 minutes; quick release steam upon completion.
-
Select sauté and cook, stirring constantly, until liquid evaporates and onions are deep golden brown.
-
Stir in salt, pepper, the remaining beef stock, Worcestershire sauce, bay leaf, and thyme. Bring the soup to a boil on the highest sauté setting, then reduce to the lowest setting and simmer for 10 minutes.
-
Discard the bay leaf and thyme; adjust seasonings to taste.
-
Preheat the broiler. Ladle soup into oven-safe bowls on a baking sheet. Top each with toasted bread and a generous layer of shredded Gruyère. Broil 4-6 inches from the element until the cheese melts and browns.
-
Garnish with thyme or chives before serving.
