Instant Pot Egg Bites Recipe

Quickly prepare coffee shop-style egg bites at home using an Instant Pot.

Instructions

  1. Grease an egg bite mold.

  2. Sauté diced bacon in the Instant Pot until browned; drain on paper towels.

  3. Clean the Instant Pot and add 1.5 cups water.

  4. Whisk eggs, half-and-half, salt, pepper, and nutmeg in a bowl.

  5. Fold in Gruyère, Parmesan, chopped scallion, and cooked bacon into the egg mixture.

  6. Divide the egg mixture among the 7 wells of the greased mold.

  7. Place the filled mold on a trivet and lower it into the Instant Pot.

  8. Secure the lid, set to high pressure for 8 minutes. Allow natural pressure release for 5 minutes, then quick release remaining pressure.

  9. Remove the mold and let stand for 5 minutes.

  10. Loosen egg bites with a spatula or knife.

  11. Invert the mold to release the egg bites.

  12. Garnish with scallions and Parmesan.
