Instant Pot Deli-Style Roast Beef

A lean, flavorful deli-style roast beef is quickly prepared in an electric pressure cooker after marinating in beer.

Instructions

  1. Pat beef dry and place in a large container or bag.

  2. Whisk beer, mustard, brown sugar, salt, pepper, and garlic powder in a bowl.

  3. Pour marinade over roast, seal, and refrigerate for 4 to 24 hours. Before cooking, remove and pat roast dry; discard marinade.

  4. Set Instant Pot to sauté with 1 tablespoon oil. Sear roast on all sides for about 10 minutes, then remove to a plate.

  5. Place trivet and 1 1/4 cups beef stock in the Instant Pot.

  6. Lock lid with vent sealed. Pressure cook on low for 4 minutes. Do not remove lid; allow to rest in the pot on 'keep warm' for 35 minutes.

  7. Remove lid and check temperature: 115°F for rare, 120-125°F for medium-rare. If too low, re-lid and warm for 5-10 minutes.

  8. Transfer roast to a cutting board, tent with foil, and rest for 15 minutes before carving.

  9. Slice thinly for serving.
