Instructions

  1. Select Instant Pot sauté function and add olive oil.

  2. Sauté diced bacon until crisp, then remove to drain.

  3. Cook chopped onion in drippings until soft, then remove.

  4. Dry and season chicken pieces, then brown in batches in the pot and set aside.

  5. Deglaze the pot with red wine, chicken stock, and tomato paste; add reserved bacon, onions, chicken, garlic, carrots, mushrooms, thyme, and bay leaves.

  6. Secure lid, set Instant Pot to high pressure for 20 minutes, then quick release steam.

  7. Remove chicken and vegetables, separate fat from cooking liquids, then return liquids to the pot and select sauté.

  8. Combine flour and softened butter to make a paste; stir into simmering liquids until thickened. Season to taste.

  9. Serve sauce over chicken and vegetables, garnished with fresh thyme or parsley.
