Instant Pot Congee Recipe

A comforting congee recipe prepared quickly and simply in an Instant Pot, allowing for easy customization with various toppings and add-ins.

Instructions

  1. Rinse the rice thoroughly.

  2. Add sesame oil, garlic, ginger, and scallion whites to the Instant Pot and sauté for 2 to 3 minutes until fragrant.

  3. Stir in the rinsed rice, chicken broth, and chicken legs.

  4. Seal the Instant Pot and cook on high pressure for 30 minutes, then allow a 20-minute natural pressure release; manually release any remaining pressure, or use the porridge setting if available.

  5. While the congee cooks, thinly slice shallots and fry them in cold oil over medium-high heat until crispy; drain on paper towels.

  6. Remove the Instant Pot lid, then take out the chicken pieces and bones; discard the bones.

  7. If desired, set the pot to sauté and stir constantly until the congee reaches your preferred thickness.

  8. Shred the chicken and stir it back into the congee.

  9. Divide the congee into bowls and top with soft-boiled eggs, crispy shallots, sliced green onions, fish sauce, and other desired garnishes.
