Instant Pot Collard Greens Recipe

Instructions

  1. Heat oil in an electric pressure cooker on sauté mode. Sauté onion and bacon for 5-6 minutes until softened and fat is rendered.

  2. Add collard greens, salt, and pepper; toss until wilted, about 3-4 minutes, cooking in batches if needed.

  3. Stir in apple cider vinegar, brown sugar, and hot sauce. Seal the cooker and pressure cook on high for 10 minutes.

  4. Manually release pressure. Taste the greens and adjust seasoning. If excess liquid, simmer on sauté until lightly coated.

  5. Serve the greens on a platter, adding more hot sauce if desired.
