Instant Pot Clam Chowder Recipe

Instructions

  1. Set Instant Pot to sauté. Add 1/2 tbsp olive oil and diced bacon; cook 3-4 minutes, stirring.

  2. Transfer cooked bacon to a plate, leaving rendered fat in the pot.

  3. Add remaining 1/2 tbsp olive oil, diced onions, celery, and garlic; sauté about 4 minutes until softened.

  4. Stir in cubed potatoes, clams, clam juice, water, salt, thyme, and pepper.

  5. Secure lid, set to high pressure for 5 minutes, then quick release pressure.

  6. Remove lid, set Instant Pot to sauté (low if possible). Add milk and cream; heat to a gentle boil, stirring.

  7. In a small bowl, whisk 3/4 cup soup liquid with flour to form a thick paste.

  8. Stir the paste into the pot; simmer about 4 minutes to thicken the soup.

  9. Ladle soup into bowls, top with crumbled bacon and black pepper. Serve with oyster crackers, if desired.
