Instant Pot Chicken Thighs and Rice

A simple pressure cooker meal, chicken thighs and rice are cooked together for a convenient one-pot preparation.

Instructions

  1. In an electronic pressure cooker, heat oil on sauté mode. Add bell pepper, onion, garlic, Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper; cook for 5 minutes until soft. Turn off heat.

  2. Stir in rice, chicken broth, and tomato sauce.

  3. Season chicken with remaining 1/2 tsp salt and 1/4 tsp pepper.

  4. Place seasoned chicken into the pressure cooker.

  5. Seal the lid and cook at high pressure for 8 minutes. Allow a 10-minute natural pressure release, then manually release remaining pressure.

  6. Garnish with fresh parsley before serving.
