Instructions

  1. Set the Instant Pot to sauté mode and heat oil.

  2. Brown seasoned chicken thighs for 3 minutes per side in batches; remove and set aside.

  3. Sauté onion, bell pepper, and mushrooms in the pot for 3 minutes until softened, then stir in garlic, oregano, and basil for 1 minute.

  4. Return chicken to the pot with chicken stock, wine, and bay leaves, then top with crushed tomatoes.

  5. Secure the lid, set the valve to sealing, and pressure cook on high for 12 minutes.

  6. Allow a 10-minute natural pressure release, then quick release any remaining pressure.

  7. Remove the chicken; stir tomato paste into the sauce and sauté for 4-5 minutes to thicken, then incorporate fresh basil and return chicken to warm.

  8. Serve over cooked pasta, garnished with fresh herbs and Parmesan cheese.
