Instant Pot Chicken and Rice Recipe

Instructions

  1. Start the Instant Pot's sauté function, add olive oil and butter, then sauté onion until translucent for about 2 minutes.

  2. Add carrots, celery, and garlic; cook, stirring, until softened and fragrant for about 2 minutes.

  3. Stir in bell pepper, Italian seasoning, salt, pepper, and chicken stock, scraping the pot's bottom.

  4. Stir in the rice, place chicken on top, secure the lid, and pressure cook on high for 8 minutes.

  5. Allow natural pressure release for 10 minutes, then quick release remaining pressure.

  6. Remove chicken, then chop or shred.

  7. Stir peas and half the parsley into the pot.

  8. Return chicken to the pot, stir to combine, and adjust seasonings as needed.

  9. Serve chicken and rice garnished with remaining parsley.
