Instructions

  1. Pat chicken thighs dry.

  2. Heat vegetable oil in the Instant Pot on high saut is for 8-10 minutes.

  3. Brown half the chicken, skin-side down, for 4-5 minutes, then flip and cook for 2 minutes. Transfer to a plate and repeat with the rest.

  4. Drain excess fat, then arrange all browned chicken in the pot.

  5. Slice the onion and 1 jalape isno (seed for less heat), and press the garlic. Distribute these over the chicken.

  6. Whisk together soy sauce, vinegar, sugar, and pepper; pour this mixture over the chicken. Add bay leaves.

  7. Secure the lid, ensure the steam valve is sealed, and pressure cook on high for 8 minutes.

  8. After cooking, carefully quick-release the steam.

  9. Remove the lid, cancel cooking, and set to normal saut is.

  10. Simmer uncovered for approximately 15 minutes, until the sauce darkens and concentrates.

  11. Garnish with sliced green onions and the second jalape isno as desired.
