Instant Pot Cauliflower

A quick and simple method for cooking a whole cauliflower in an electric pressure cooker, ready in minutes.

Instructions

  1. Trim and clean a whole cauliflower head, then drizzle with 2 tablespoons of olive oil.

  2. In a small bowl, combine Italian seasoning, kosher salt, black pepper, and red pepper flakes; rub this spice blend over all sides of the cauliflower.

  3. Place the metal trivet into the electric pressure cooker pot, pour in water, and position the seasoned cauliflower head on the trivet.

  4. Seal the lid, set to manual, and cook on high pressure for 2 minutes.

  5. Immediately manually release the pressure, then transfer the cooked cauliflower to a cutting board.

  6. Prepare the topping by combining 2 tablespoons of olive oil, red wine vinegar, pine nuts, capers, golden raisins, and chopped parsley in a medium bowl.

  7. Cut the cauliflower into wedges or thick steaks, spoon the prepared topping over each piece, and grate fresh lemon zest before serving immediately.
