Instructions

  1. Prepare pickled red onion by combining thinly sliced red onion with lime juice, salt, pepper, and optional cilantro; set aside.

  2. Pat pork shoulder dry and cut into large chunks.

  3. In an Instant Pot on high sauté mode, add olive oil and brown the pork chunks in batches for about 8 minutes total.

  4. Cancel sauté. Return all browned pork to the pot. Add oregano, cumin, 2 teaspoons salt, jalapeño rings, quartered onion, bay leaves, freshly squeezed orange and lime juices, and chicken stock.

  5. Secure the lid, set the steam release valve to sealing, and pressure cook on high for 40 minutes, then allow for natural pressure release.

  6. Preheat the broiler and line a large baking sheet with foil.

  7. Remove pork to a cutting board, shred or chop, then arrange in a single layer on the prepared baking sheet. Broil for 2-3 minutes until crisp.

  8. Serve the crisp pork in tortillas, garnished with the pickled onion and desired toppings like cilantro, salsa, or radishes.
