Instructions

  1. Preheat the broiler and line rimmed baking sheets with foil, then spray with nonstick spray.

  2. Place a trivet and 3/4 cup water or stock in the Instant Pot inner pot.

  3. Cut whole chicken wings at the joint, sprinkle with kosher salt, and arrange them on the trivet.

  4. Lock the Instant Pot lid, set the steam release to sealing, and pressure cook on high for 10 minutes.

  5. After 10 minutes, allow 5 minutes of natural pressure release, then carefully vent to release any remaining pressure.

  6. While wings cook, combine hot sauce, butter, vinegar, black pepper, garlic powder, and cayenne (if desired) in a saucepan, bringing to a simmer for 1 minute.

  7. Drain the cooked wings, transfer to a bowl, and toss with about half of the prepared sauce mixture.

  8. Arrange the wings in a single layer on the prepared baking sheets. Broil 4 to 6 inches from the heat source for 5 minutes, then turn and broil for another 4 to 5 minutes until golden brown.

  9. Remove wings to a bowl, drizzle with the remaining sauce, and serve with celery, carrot sticks, and dipping dressing.
