Instructions

  1. Trim and halve Brussels sprouts.

  2. Set an electric pressure cooker to high sauté. Add oil, then cook onions, stirring frequently, until golden brown (about 6 minutes).

  3. Stir in garlic and thyme for 30 seconds until fragrant.

  4. Deglaze the pot with broth, scraping up any browned bits.

  5. Add the Brussels sprouts, salt, and pepper.

  6. Secure the lid, set to high pressure cook for 1 minute, then quick-release the pressure immediately.

  7. Remove the lid. On high sauté, add maple syrup and vinegar. Cook, stirring occasionally, until liquid evaporates and sprouts begin to brown (about 3 minutes).

  8. Season to taste and serve immediately.
